Should I make “Food Friday” a thing? Post something about food every Friday? Thinking about it…
Anyway! On Sundays I meal prep, so this past Sunday I made chicken burrito bowls. I shop on a budget for myself and boyfriend, and I meal prep for us both. Roughly this means I’m the chef, sous chef, clean-up crew (although the bf cleans up after me because I always leave things out haha), and the food shopper (is that even a thing)? I’m pretty much a functioning meal prep company embodied in one tiny human!
Just for reference, I make 7-8 meals for my boyfriend and 5-6 meals for myself. That means 12-14 meals total and half this week were these chicken burrito bowls. Here’s a picture of 6!
The 4 horizontal meals are mine, and the 2 on the right are his. The difference? His clearly have corn, beans, and tomatoes. Mine do not have those fun toppings because mine are only 387 calories (53 Carbs|3 Fat|33 Protein) and his are about 500 calories! His also have 1.5 cups of rice and mine are a strict 1 cup.
The best part? The chicken, onions, and peppers were done in ONE PAN! That’s right. One pan, into the oven for 30-35 minutes. Cutting the veggies only takes about 10 minutes or less, so overall cooking was a breeze. I was done making dinners (including portioning it out) in one hour. That’s impressive.

If you’re curious, the chicken is seasoned with salt, pepper, cumin, and garlic powder. Then I topped it with salsa and that’s how it went into the oven! How easy is that?
